  • 500 g orzo/pasta rice cooked and cooled
  • 1 cucumber chopped
  • 1 red onion finely chopped
  • 2 cups cherry tomatoes halved
  • 1 cup olives pitted and halved
  • 1 cup feta cheese crumbled
  • for the dressing
  • 3 tablespoons olive oil
  • 3 tablespoons lemon juice
  • salt & pepper to taste

Instructions:
  1. Halve the chicken horizontally so you are left with two thin chicken breasts. Repeat with the remaining chicken breasts.
  2. Mix together the olive oil, lemon juice, oregano, paprika, salt and pepper then pour over the chicken breasts and allow to marinate for 10 minutes while you heat a griddle pan.
  3. To make the Greek orzo salad, combine all the ingredients and mix well.
  4. Mix together the dressing ingredients and pour over the salad, mix and allow to stand for 10-15 minutes.
  5. Cook the marinated chicken in a hot griddle pan until cooked through then remove and allow to rest for 5-10 minutes before slicing and serving with the Greek orzo salad.
